Vegetable and Potato Fritters

Do ever get tired of the same old vegetable dishes? Why not try this potato and veggie dish? You can serve it on its own or as an accompaniment.

What you will need:

2 medium potatoes

3 medium carrots

2 medium zucchini

1 onion, chopped finely

1 1/2 cups grated cheese

Festive Ham and Pasta Bake

3/4 cup plain flour

Black pepper

Chilli flakes

Vegetable and Rice Loaf 2

2 eggs, separated

Oil for cooking

Method:

Grate the potato, carrot and zucchini (I just blitz them in the Thermomix on turbo for about 4 seconds)

Add the chopped onion, flour, cheese, pepper, chilli flakes and egg yolks and mix well.

Beat the egg whites to soft peaks. 

Vegetable and Potato Fritters 2

Fold the beaten egg whites through the vegetable/flour mixture. 

Heat oil in frypan over medium heat – or use a pancake maker and grease the surface lightly.

Use approximately 1/4 cup of mixture for each fritter.

Place onto the hot pan or pancake maker and flatten slightly.

Cook each side for approximately 5 minutes or until both sides are golden brown.
