Just looking for something to cook for dinner in Mum’s old Recipe Book and found a recipe that brings back bitter sweet memories. It’s a tasty veal recipe that Mum started to cook when I was in my late teens. But the reason why she started cooking this recipe was that my dad became very ill with a bad heart. Mum’s cooking had to change drastically and we all cut out salt. We also moved from eating butter to margarine. I know there is a lot of talk these days about the benefits and dangers or eating both margarine and butter. But back then butter was evil!! I now tend to use butter over margarine or avoid both and cook with olive oil.

Mum’s Recipe Book

Anyway, here is the recipe.

You will need:

1/3 cup of margarine/butter or olive oil (or any other oil you like using!)

1 kg veal steak, cubed

1 cup diced onion

3 level tablespoons of flour

1 cup beef stock

3/4 cup white wine

1 teaspoon lemon juice

Bouquet garni

Pepper to taste

1 cup of sliced mushrooms

3/4/ cup of non fat natural yogurt

2 level teaspoons of parsley 

Boiled or steamed rice to serve

Method:

Heat oil in a saucepan. Add meat and onions and fry until brown. 

Stir in flour, add wine and stock.

Stir until it thickens

Add lemon juice, Bouquet garni and pepper.

Reduce heat, cover the pan and simmer for 45 mins- 1 hour. 

Add yogurt, mushrooms and parsley. Mix and heat through.

Serve with cooked rice.

This should serve 4 people.
