In an earlier post I wrote about my love for cooking and how my Mum had influenced this passion. I also shared that I would be posting recipes from her very old cookbook. I will continue to do this but today I started looking through some of her newer books. This recipe is from my Mum’s later recipe book. It is actually an 1983 diary so I am guessing she started writing in this book in the early 80s.

This recipe is not written in her handwriting and I know she was given the recipe by her neighbour Tzolin so perhaps it was her who recorded it in Mum’s book. I would like to acknowledge Tzolin for this recipe and also thank her for the care she provided to Mum, often cooking her dinner and dropping in with some treats.

This recipe is a particularly yummy version of Tabbouleh and one that my sister in law wanted me to send her. So here it is Louise – its only taken 4 years!!!

You will need: 

2 cups  of oil (I use only 1/2 cup and I use Olive Oil)

3-4 onions

2 cans chopped peeled tomatoes

1 tablespoon of tomato paste

Juice of 2 lemons

Parsley

3 cups of Cracked Wheat

Salt and Pepper to Season

Pinch Cayenne Pepper

Method:

Fry onions in oil over a medium heat  until soft and yellow.

Drain the tomatoes, keep the juice to add later.

Add drained tomatoes to the onions and cook for 10 minutes on.

Turn heat off and add the tomato juice from the cans.

Add half a cup of water.

Add tomato paste.

Mix around.

Add Cracked Wheat and stir mixture well. 

Cover and let rest for 10-15 minutes. 

Add lemon juice, parsley, and seasonings and stir. 

Transfer to a large serving bowl.
