Cheese Muffins

Growing up in suburban Sydney in the 60’s meant that our food was plain and predictable. We always had enough to eat but as with most children, we had our likes and dislikes! In fact I disliked eating chops and three veg so much that it took me years to serve it to my own family and mashed potatoes is something I still struggle with.

So I was most appreciative when my mother started to experiment a little with food to introduce a bit more variety into our diets. This Steak Fromage recipe certainly did that. It is incredibly easy to make and very tasty to eat. It looks a bit strange when it comes out of the oven because the meat is actually ‘broiled’ in milk. But just ignore the initial look and taste it – you won’t be disappointed! The meat is tender and the cheesy topping adds a rich flavour to the meat.

This recipe is from Mum’s Recipe Book and it is an easy recipe for 4 people (just halve the ingredients for 2 people).

Mum’s Recipe Book

You will need:

4 pieces of steak (doesn’t have to be top quality but should be suitable for grilling)

2-3 onions, peeled and sliced

Worcestershire sauce 

Approximately 1 cup grated tasty cheese ( or cheese cut into small pieces)

Approximately 500 ml – 1L milk (can be skim, light or full cream)

Method:

Heat oven to 200 C

Grease a shallow ovenproof dish large enough to fit the steak comfortably.

Place the steak in the dish. 

Cover the steak with the slices of onion.

Sprinkle the cheese over the onion. 

Sprinkle liberally with Worcestershire sauce 

Pour the milk into the dish, around the steak and fill to the height of the steak. 

Cook in the oven for approximately 1 hour.

(If you use a cheaper cut of steak, cook for 1.25 hours at 180-190 C.)

Remove the steak carefully from the dish, try to avoid disturbing the topping.

Serve with vegetables or salad and crispy potatoes.
