This recipe is from Mum’s Recipe book and it is a special recipe from a neighbour. This neighbour cared for my mother for years by providing company, support and food at a time when mu was quite lonely.
I tried the recipe a few weeks ago and I love it! I halved the recipe though as it was definitely one to feed a crowd.
What you will need:
Pastry Ingredients:
500 g plain flour ( I used bread flour)
1/2 cup olive oil
1/2 cup plain yoghurt
1/2 cup milk
1/2 cup water
2 teaspoons dry yeast
Filling Ingredients:
125 g feta cheese
125 g ricotta cheese
1/2 jar Spanish olives
1/2 jar stuffed olives
1/2 onion chopped
Black pepper
Paprika
Chilli flakes ( these are my addition)
a few sprigs of fresh oregano, chopped
1 egg
An extra egg and milk for glazing
Method:
Pastry:
Mix all ingredients for the pastry together and mix well. ( I kneaded the mixture in my Thermomix for 2 minutes. You could just need by hand for a few minutes too.)
I left the dough to rise for about 30 minutes.
Filling:
Mix all ingredients together either in a food processor or a Thermomix until well combined and olives are chopped into small pieces.
Putting it all together:
Roll out the pastry and cut into circles or squares.
Place the filling into the centre of each piece of dough.
Fold over the dough and join the edges together.
Brush with egg-milk mixture and sprinkle over with sesame seeds.
Bake at 200 C for around 20 minutes.
