Homemade Brioche Buns

These buns are great for burgers, lunch rolls or dinner rolls. The tip is to be patient and allow the specified time for rising. My mistake when making rolls over the years was to use too little yeast and wait for too little time. Its hard to wait when you know what the final product will smell and taste like isn’t it?

But really – you should wait because the end product will be great!!

I use my Thermomix to make these rolls. You can make them without a Thermomix but make sure you knead the dough well.

What you will need

For the bun mix:

30g sugar

330g warm milk

15g yeast

1 tsp salt

80g butter

650g bread flour

1 egg

For the egg wash:

1 tablespoon milk

1 egg

sesame seeds

Method

 Place the sugar and milk in the Thermomix bowl and heat on 37C for 90 seconds (or heat to 37C in a saucepan – use a thermometer to measure the milk temperature.)

Add the yeast, butter, flour, salt and egg in the Thermomix bowl and mix to combine for 10-15 seconds on speed 6.

Knead for 3 minutes in the Thermomix or for at least 15 minutes if kneading by hand

Remove the dough and form a ball. Wrap in a silicone mat and place somewhere warm for at least 60 minutes until doubled in size.

Punch dough down and shape into rolls. It is your choice what size buns you make!

Place the buns on a baking tray lined with baking paper.

Allow the buns to rise again for 30 -40 minutes until nearly doubled in size.

Preheat oven to 180C degrees.

Beat the egg and milk together and use to brush over the tops of the risen buns. Sprinkle with sesame seeds and place in the oven for 20 minutes, or until cooked through and golden brown.
