Parmesan Potatoes 3

My mum’s recipe book is becoming so fragile now that it is a race against time to share all the wonderful recipes before the book just crumbles. In some ways it makes me feel sad as I work through the book knowing that Mum can no longer create her culinary masterpieces. But, it is a voyage of discovery for me and brings back lots of memories. Sometimes I find recipes that I suspect have never been cooked so that gives me an opportunity to create something new. This recipe is one of those. I don’t remember mum ever making it – so here’s to you mum- we will enjoy!

Mum’s Recipe Book

 

What you will need:

8 medium sized potatoes, peeled

Parmesan Potatoes

1/2 cup butter

1/2 teaspoon salt

1/2 teaspoon paprika

60 g freshly grated parmesan cheese

2 tablespoons of breadcrumbs

Method:

Slice through the potatoes – making sure you do not slice through completely. Slice at 3 mm intervals across the whole top of the potato. Place the prepared potatoes into a baking dish.

Melt the butter and pour over the potatoes.

Sprinkle the salt and paprika over the potatoes and bake in a moderate oven for 55-60 minutes. Baste the potatoes regularly.

Combine the breadcrumbs and cheese and sprinkle over the potatoes.

Bake for 20 minutes or until the breadcrumbs are lightly browned.

Serve immediately.
