It’s a wonderful ‘almost Spring’ day in Sydney and if I wasn’t at my computer writing blog posts I would be out enjoying the sun and possibly having a picnic! Food preparation is never far from my mind – of course it is something I love doing – so I started thinking about what would be nice for the picnic. Here is what I came up with from Mum’s Recipe Book…. Spinach Turnovers. They are a tasty treat that can be served hot or cold and they a great alternative to a sandwich for your picnics. I have updated the recipe a little and added some Essential Oil for the extra tasty boost.

What you will need:
Puff pastry sheets
1 packet of frozen spinach or 1 bag of fresh baby spinach
1 x chopped onion
200-300 g chopped bacon or ham
3 beaten eggs (keep some aside for an egg wash)
100 gms Ricotta Cheese
1/2 cup grated tasty cheese
Salt and pepper to taste.
1 Drop of Thyme Essential Oil
Method:
Mix together the onion, spinach, cheese, bacon or ham and eggs in a bowl.
Add the drop of Thyme Essential Oil and mix well.
Cut the pastry into large rounds ( i.e. the side of a saucer).
Spread the mixture onto one half and fold the pastry over to make the turnover.
Seal the edges and place on an oven tray lined with baking paper.
Slit the top of each turnover and brush with the egg.
Bake in a hot oven (200 C fan forced) for approximately 15-20 minutes.
These are delicious hot or cold and can be frozen.
Serve with baby tomatoes and carrot sticks and you have a balanced picnic meal!
Tip: I use pastry that has 25% less fat. Using filo pastry and spraying on a light coating of Olive Oil is another way to reduce the fat content. If you choose the filo you may want to change this recipe from turnovers to a larger pie and cut into slices.
