I love the way recipe names are jazzed up over the years to make them sound more enticing. Smashed potatoes is much more interesting than ‘mashed’ potato’, don’t you think?  When I  first saw a reference to smashed potatoes I just had to try them and have now tried a few different approaches. I find that it best to use small potatoes and the end result is aesthetically more pleasing if you use a mixture of different coloured potatoes. But you may have your own favorites, so go for it!

What you will need:

To feed a family of 6 use 8-10 small -medium potatoes (washed and scrubbed)

1/3 cup Olive Oil

3-4 sprigs of Rosemary

2 x cloves of Garlic, crushed

A liberal sprinkle of Cinnamon

Salt and Pepper to taste

1 drop each of Rosemary and Cinnamon Bark Essential Oils + a few tablespoons extra Olive Oil.

Method:

Preheat your oven to 180 C.

Grease a baking dish well with olive oil. You can line the base with baking paper if you wish.

Steam or microwave the potatoes for 5-8 minutes.

Place the partially cooked potatoes into your baking dish.

Mix the Rosemary, Garlic, Cinnamon, and Olive Oil together and drizzle over the potatoes.

Cook the potatoes for 25 minutes.

Place a clean tea towel over the length of the baking tray. Press down on the cloth evenly to smash all the potatoes.

Mix the Essential Oils with the extra Olive Oil and Salt and Pepper and drizzle over the smashed potatoes.

Cook for an extra 10 minutes at 220 C or until the potatoes are browning nicely.
