Armenian Easter Bread 3

Yeast cookery has always been my favourite and I am always excited to find new recipes that are both easy and tasty! Of course this recipe is meant to be made at Easter but is tasty all year round! It is also not exactly new as I found it in Mum’s Recipe book. I believe it was given to her by a neighbour so a shout out now to that neighbour – thanks so much!!

I make this recipe in the Thermomix but if you are prepared to put some effort in it is also easy to make using your hands!!!

Mum’s Recipe Book

What you will need:

375 grams bread flour

125 grams SR Flour

Armenian Easter Bread

3 eggs ( + an extra egg for the glaze)

1/2 cup sugar

125 grams  butter

1/2 cup milk

2 teaspoons dried yeast

Homemade Brioche Buns 2

1/2 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon mixed spice

Method:

Add 50 grams milk and the dried yeast to the bowl and cook at 37 C on Speed 1 for 1 minute. 

Add the flours, sugar, eggs, butter, spices and remaining milk to the bowl. 

Mix for 6 seconds on Speed 6. 

Knead using dough setting for 4 minutes. (If you are kneading by hand keep it going for about 10 minutes!!)

Leave the dough to rise for approximately 3 hours or until the dough has doubled in size. 

Punch down the dough and roll into a long strip.

Cut into small pieces ( the size depends on how big you would like your buns to be!!)

Roll out each piece and form into rounds, horse shoes or small plaits. You can even make them into bunny shapes and decorate them with currants! 

Brush with beaten egg and bake in a moderate oven for around 15-20 minutes until golden.
