Do you like chocolate cake? My children loved this one when they were young. They also loved making it as it was so easy to make. I hope you enjoy it as much as my family does.
What you will need:
1 tablespoon white vinegar
1 cup milk
1 1/2 cups plain flour
1/2 cup cocoa
1 1/2 teaspoons bicarbonate of soda
1 1/4 cups sugar
145 grams butter, melted
1 teaspoon vanilla
2 eggs, beaten
Method:
Set oven to 180 C and line and grease two x 20cm sandwich cake tins.
Add vinegar to the milk.
Mix flour, cocoa, bicarb and sugar in a large bowl.
Add the butter, eggs, vanilla and milk to the bowl and mix with a wooden spoon until the mixture is smooth (i.e. for about 2 minutes).
Pour into the prepared pans and cook for about 35-40 minutes. Test with a skewer to see if it is cooked. Cook for an additional 5 minutes if required.
When cool, sandwich together with raspberry jam and ice the top with chocolate icing. Or, you may just like to dust the top with icing sugar.
