This recipe for Passionfruit Delicious is from Mum’s Recipe Book. She is no longer with us but I think she would be pleased to think that I was sharing the recipe in the lead up to Mother’s Day. It is a simple and tasty dessert that your Mother is sure to love. Whether you are there in person with her or just dropping it off for her to enjoy it is sure to brighten her day!
What you will need:
3 tablespoons plain flour
1 cup sugar
3 eggs (separated)
1 1/2 cups milk
4 passionfruit
Grated rind of a lemon (or I add a drop of Lemon Essential Oil)
1 tablespoon melted butter
Method:
Mix flour with half the sugar.
Add egg yolks and enough milk to form a paste.
Slowly mix in the remaining milk.
Beat the egg whites stiffly with the remaining sugar.
Fold the passionfruit, Lemon rind or drop of oil and butter/flour mixture into the beaten egg whites/sugar.
Turn the mixture into a greased pie dish.
Stand the dish in hot water in a baking dish.
Bake in a moderate oven until set – this should take approximately 45 minutes.
