This recipe is quite literally ancient! I found it in my Mother’s Recipe book but it is actually my grandmother’s recipe. Just like many of the good old recipes, it is easy to make and it tastes wonderful with a cup of tea!
What you will need:
450 grams dates
1 cup cold water
1 teaspoon bicarbonate of soda
170 grams butter
1 cup sugar
2 eggs
225 grams plain flour
Method:
Soak the dates in the water and bicarb for 3-4 hours.
Cream the butter and sugar and add eggs, mixing in well.
Add dry ingredients and the dates.
Mix well and place into greased loaf tins.
I use small tins and baked the loaves for 1 hour at 160 C. If you use a larger tin bake for 1 1/2 – 1 3/4 hours.
We love to spread this cake with a bit of butter and enjoy with a cuppa!
