Does your family have favourite Christmas foods?  We certainly do and I love cooking up a storm – particularly to make gifts for friends and family. One of the our favourite family sweet treats is Rocky Road. I use a recipe from Mum’s Recipe Book for this. But a few years ago I made this wonderful treat and no one ate it because we had all gone ‘sugar free’ or at least sugar reduced!!

I know that many sugar replacements are not good for you but here in Australia we can buy some very tasty sugarless sweets that contain Stevia – a natural and very potent sweetener. You can decide for yourself whether or not you wish to try this sweetener. We are happy to use it in our occasional treats. If you are interested in a sugar free Rocky Road then read on!! Honestly, you would never know that it was made without sugar.

I make my Rocky Road in the Thermomix but it is also easy to make in the Microwave.

Mum’s Recipe Book

What you will need:

Homemade Christmas Gifts: Sugarless Rocky Road

3 x 100 g Blocks of Sugarless Milk Chocolate

1 x 100 g Block of Sugarless Dark Chocolate

2 x packets of Sugarless Berry Jellies

1 x packet of Double D Sugar Free Marshmallows (each chopped in half)

50 grams coconut oil (the solid type)

1/2 cup roasted, unsalted peanuts

Method:

Thermomix Method

Break up the chocolate into squares and place in the bowl. Chop for 5 seconds on Speed 6.

Add coconut oil.

Melt for 2-3 minutes on Speed 2, Reverse and 50 C. (You may need longer to make sure all of the chocolate has melted.)

Cut the sweets into small pieces.

Mix nuts and sweets together. Homemade Christmas Gifts: Sugarless Rocky Road 3

Add nuts and sweets to the chocolate mixture in the Thermomix  bowl and mix 30 seconds, Reverse, Speed 2.

Pour into a flat tin that has been lined with baking paper, to set. When set cut into chunks.

Store in the refrigerator.

Microwave Method

Add all ingredients other than the chocolate and coconut oil to a large bowl.

Break the chocolate into squares into a microwave proof bowl.

Melt the chocolate and coconut oil on High, for 1-2 minutes. Stir well and melt for an extra 1 minute or as much as needed so that all of the chocolate is melted.

Pour the chocolate over the other ingredients and mix well.

Pour into a lamington tin lined with baking paper to set. When set cut into chunks.

Store in the refrigerator.
