This is one of my favourite Christmas recipes from Mum’s Recipe Book. I remember helping mum with this when I was quite young. She would ask me to crush the biscuits to go into the mix. But my favourite thing was opening the can of condensed milk and pouring the sticky liquid into the bowl. It seemed to take for ever to empty the can and I had to hold it with two hands. It’s funny what you remember about being a child isn’t it? I guess these Rum Balls would be considered unhealthy these days but then again they are meant to be a treat for Christmas. Think of them as special ‘alcoholic’ Bliss Balls and enjoy!!
This recipe is from Mum’s Recipe Book.
What you will need:
1 x Packet Arrowroot Biscuits
1 tin condensed milk (I use the reduced fat version)
2 tablespoons cocoa
1/2 cup coconut (+ extra coconut for rolling the balls)
4 tablespoons rum
1 cup mixed fruit
Method:
Crush the biscuits. One easy way is to place them into a plastic bag and crush with a rolling pin. If you have a Thermomix, just blitz them for 2-3 seconds.
Place the crushed biscuits into a large bowl and add all other ingredients.
Mix well.
Scoop out spoonfuls of the mixture and roll into a ball ( about a golf ball size or smaller) and roll each ball in the extra coconut.
These keep well in the fridge for a few months – if they last that long!
