foThis recipe is from my Mum’s Recipe book and it one of my favourites! Kiss Cakes are really easy to make and they absolutely melt in your mouth. So I think they are perfect for a Valentine’s Treat- particularly if you ‘kiss’ the cakes together with Strawberry jam and serve then with some freshly whipped cream.

Mum’s Recipe Book

You will need:

120 grams butter

120 grams sugar

1/2 teaspoon vanilla

120 grams cornflour

 2 eggs

1 cup SR Flour

Method:

Cream the butter and the sugar together and add the eggs one a a time, beating after each addition.

Mix in the cornflour and SR flour. The mixture will be fairly dry.

Drop the mixture in teaspoons onto a greased baking sheet ( or you can use baking paper).

Bake in a moderate oven for about 10 minutes. Leave on the tray for about 2-3 minutes. Cool on a wire rack.

They should not go brown but will brown slightly on the bottom.

When cold ‘kiss’ them together with jam.

Enjoy!
