Are you looking for something a little different for Christmas gifts this year? Christmas food is something that is always welcome, especially for those people who don’t cook a lot. This recipe from Mum’s Recipe Book is simple to make and it looks impressive.
What you will need:
Topping ingredients:
30 grams butter
1 tablespoon milk
1 teaspoon vanilla
1/3 cup sugar
1/3 cup sultanas
100grams chopped glace cherries
Base ingredients:
1/3/4 cups Plain flour
1/2 cup icing sugar
2 tablespoons cocoa
250 grams butter
Method:
Base:
Rub together the butter and the flour, mix in the sifted cocoa.
Press the mixture into a greased lamington tin.
Bake at 180 C for 15 minutes.
Topping:
Melt butter, stir in sugar, milk and vanilla.
Remove from heat and stir in fruit.
Cool slightly.
To complete the slice, remove the base from the oven and spread the topping over.
Return to oven and bake at 170C for a further 15-20 minutes.
Cut into fingers then cool before removing from the tin.
