I found this recipe for Pumpkin and Lentil Soup in Mum’s Recipe Book. Pumpkin soup is definitely a favourite in our house but the idea of boosting the protein content with the lentils appealed to me. Then I decided to make it a little more interesting by adding some Thyme Essential Oil. This is a new oil for me – it just arrived a few days ago and I was itching to use it in cooking. So I tried it out and the soup is very tasty!

Mum’s Recipe Book

I have included both Mum’s recipe and my Thermomix adaptations.

What you will need:

1 onion, chopped

2 cloves garlic, crushed

2 sticks celery chopped roughly

1 carrot chopped roughly

350 grams pumpkin chopped into 2 cm chunks

1 cup of red lentils

Vegetable stock

1 drop Thyme Essential Oil

3 cups water

Salt and Pepper to taste.

1 tablespoon of olive oil ( for Thermomix method)

Method:

Place all ingredients in a large saucepan. Cover and place over medium heat to bring to the boil. When boiling, reduce heat and simmer for 20 minutes until the pumpkin is soft. Cool.

Puree in a food processor in several batches. 

Season to taste and serve with crusty bread. 

This is also nice with a dollop of sour cream and chopped herbs such as thyme, basil, chives or parsley. 

Thermomix Adaptation:

Chop pumpkin, onion and garlic, carrot and celery in the bowl for 3 seconds on Speed 7.

Add oil and cook on Varoma heat for 3 minutes on Speed 1. 

Add water, lentils, stock and Thyme oil. 

Cook at 100 C for 20 minutes on Speed 1. 

Puree for 20-30 seconds on Speed 10. (Be careful to increase the Speed slowly.)

Season to taste and serve with crusty bread.
