What could be nicer on a Sunday afternoon than afternoon tea with a slice of fruit cake?
Well actually I think it would be afternoon tea with a slice of Pineapple Boiled Fruit Cake made with that extra Essential Oil boost!
The addition of pineapple to this fruit cake means that the cake is delightfully moist. You will not be able to stop at one slice!
This recipe is one from Mum’s Recipe Book but with an ‘oily’ twist.

What you will need:
1 cup sugar
125 g butter
2 eggs
450 grams mixed fruit
1 tin crushed pineapple
1 cup Plain Flour
1 cup Self Raising Flour
1 teaspoon Bicarbonate of soda
1 drop each of Cinnamon Essential Oil and Cardamom Essential Oil
Method:
Place sugar, contents of the can of pineapple, mixed fruit, Bicarb, spice and butter into a saucepan and bring to the boil. Boil for 3 minutes, remove from the heat and cool completely.
Mix in the flours alternately with the beaten eggs.
Add the oils and mix in well.
Place the mixture into a greased, paper lined 20 cm ( 8 inch) cake tin. Bake in a moderate oven (170 C) for approximately 1.5 hours. Reduce the heat to 150-160 C and bake for a further 20-30 minutes until the cake is cooked through.
Cool completely before removing from the tin – if you can wait that long!!
