Cooking with Oils: Individual Steamed Christmas Puddings (Thermomix Recipe) 10

 

This recipe is quick to make – unlike many pudding recipe where you need to steam the pudding for 6 hours! It is also handy to have some small puddings on hand for those unexpected guests or as a gift for someone living alone or unable to cook!

What you will need:

125g  each of raisins, sultanas, currants and pitted prunes

250g mixed fruit

1/4 cup brandy or sherry

100g butter

100g brown sugar

1 tablespoon golden syrup or treacle

1 teaspoon bicarbonate of soda

1 tsp Nutmeg

1 tsp Cinnamon

1 teaspoon vanilla

1 drop each of Ginger, Clove and Cinnamon Essential Oils

100g fresh bread, in rough chunks

100g Plain flour

1 Egg

Silicone moulds

Method:

Soak the fruit in the brandy or sherry for 1 hour (minimum – overnight is ok).

Blitz the bread to make crumbs (Turbo for 3 – 5 seconds). Set aside.

Add the fruit, butter, sugar, golden syrup, spices, vanilla and bicarbonate to the Thermomix bowl. Do not add the oils at this point! Cook this mixture at 100C for 25 minutes, Reverse, Speed 2.

Cool slightly – for about 10 minutes. Stir with a spatula every few minutes to allow the heat to escape.

Add the flour, breadcrumbs, egg and Essential Oils. Mix for 3-4 minutes, Reverse, Speed 4.

Scoop the mixture into the silicone moulds and place into the Varoma dish and tray. Cover with baking paper. You can cover with foil too but be careful that the water from the steaming process does not pool on the foil. Also make sure that there are enough holes left uncovered to allow the steam to move throughout the Varoma.

Place 1200 mls boiling water in the Thermomix Bowl, put the Varoma into place and steam the puddings for 45-50 minutes.

These puddings are very rich! Serve with ice cream and or custard. The puddings freeze well and will reheat quickly in the Microwave.
