This is an old recipe from Mum’s Recipe Book. They are a simple alternative to scones or bread and can be served on a range of occasions. These muffins can be made as tiny muffins for afternoon tea or as larger ones to serve with a hearty casserole. I personally think they are great with a little bacon added and perhaps served with a drizzle of maple syrup. Perfect for breakfast on a special occasion. I have added a few suggestions to the original recipe i.e. the Essential Oil and cayenne pepper. But even without these additions they are very tasty muffins.
What you will need:
1 cup SR Flour
1 cup grated cheddar cheese
3/4 cup milk
Pinch of salt
Pinch of cayenne pepper
Crushed thyme and or a drop of Thyme Essential Oil
You may also wish to add a few rashers of chopped bacon (because everything is better with bacon!)
Method:
Mix all ingredients together with a spoon (I mix in my Thermomix – 20 secs, at Speed 4, Reverse).
Place mixture in non-stick muffin pans.
Bake for 10-15 minutes at 220C. (Cook for 7-8 minutes if you are making mini muffins.)
Serve hot and enjoy!
