This recipe is in Mum’s Recipe Book marked as ‘Favourites’. In my memory they are associated with Christmas. Mum made all sorts of cakes and biscuits for Christmas. As well as all the sweet treats these ‘Cheese Buttons’ were made to eat when we had people over for Christmas drinks. They are also my brother’s favourite and when mum died he asked if I could make them for the tea that followed the funeral.
I like them because they have a kick in them from the Cayenne pepper and because cheese is one my favourite foods!! I hope you try them and love them just as much as we do.
You will need:
1 cup SR flour
120 grams butter
1/2 teaspoon of salt
230 grams grated tasty cheese
Cayenne pepper to taste
Coconut to cover the biscuits
Method:
Crumble the butter, flour, salt and cayenne together.
Mix in the cheese and mix well.
Mix small amounts of the mixture into small balls. Toss them in coconut and place on a baking tray.
Squash each ball slightly with a fork.
Bake in a lightly greased tray in the oven at 190-200 C for 15-20 mins or until slightly brown on the bottom.
Once cooked leave on the tray for 5 minutes before placing onto a cooling rack.
Note: In Australia we use the term ‘biscuits’ instead of ‘cookies’!
