It seems that winter has only just arrived in Sydney even though it is August and we should be heading into Spring. With the coming of winter we feel the need for comfort food. Of course we should not indulge everyday but the occasional treat on a cold night as we gather around the fire or in our case, the gas heater, can just be what you need on a cold night!
This recipe is just what you need for that occasion. It’s another one from Mum’s Recipe book and I believe that it came from a very dear friend, known to me as Aunty Dot. This is very old fashioned cooking but it is also simple and tasty!
What you will need:
1 tablespoon of butter
2 tablespoons of golden syrup
A handful of raisins (optional)
1/2 teaspoon bicarbonate of soda
3/4 cup milk
1 cup SR Flour
A pudding steamer
A large saucepan and some boiling water
Method:
Mix together the butter and syrup. Add in the milk and soda, raisins, if using, then the flour. Transfer the mixture to the steamer.
Place the steamer into the saucepan, add the boiling water to the saucepan to the depth of about 4-5 cm.
Bring the water back to the boil, lower the heat so it can simmer steadily.
Steam in the saucepan for 1 1/2 hours.
