This recipe is one from Mum’s Recipe book – but one that I had never seen before. So we tried it last night. I have to say when I made it, it wasn’t actually very crunchy but it was certainly tasty so well worth sharing with you. I added a few bits and pieces and overall it was a win!
What you will need:
1 kilo of chicken thigh fillets or about 2 kilos of drumsticks
1 packet of plain rice crackers ( we used wholegrain)
2 teaspoons paprika
A handful of fresh herbs
Garlic powder
Chilli flakes
2 tablespoons sesame seeds
Salt and pepper
Olive oil
Balsamic vinegar (to taste)
Method:
Crush the rice crackers.
Mix the crackers with the spices, chopped herbs and sesame seeds.
Spray or paint the chicken with olive oil and coat with the dry mix.
Place in a greased oven tray and sprinkle over some olive oil and balsamic.
Bake at 200 C for 45 minutes.
We served it with chips and salad!
