Lovely little Apple and Apricot Cakes

This recipe is one of my Mum’s Recipe Book. It was a favourite of mine when I was a teenager.

Mum’s Recipe Book

In the book the recipe is labelled as ‘Ruth’s Slice’- named after a lady that mum had worked with. Mum made it as a slice but I have discovered that the recipe makes lovely little cakes! The original recipe was a little vague in some areas so I just had to do a trial bake to iron out the problems!!! And of course, we had to do a taste test.
The cakes were pronounced lovely by all, hence the new name, Lovely Little Apple and Apricot Cakes.

What you will need:

225 g butter

Rolled Oats Slice 2

180 g raw sugar 

225 g rolled oats

Rolled Oats Slice

225 g SR flour

Approximately 8-10 pieces of dried apple and 12-15 dried apricots – and some hot water for soaking

1/2 teaspoon bicarbonate of soda

2 large eggs

Old Style Bacon and Egg Pie

1 teaspoon vanilla

about 3 tablespoons of water or milk 

Method:

Place the dried fruit in a bowl and cover with hot water. Leave to soak for about an hour.

After an hour I blitzed the fruit in the Thermomix – you can do this in a blender too.

Leave aside. 

Melt the butter.

Stir the oats, flour, sugar soda and beaten eggs into the melted butter. Mix well.

Place spoonfuls of the mixture into the bottom of muffin or small cake pans. Use half of the mixture.

Place spoonfuls of the fruit over the top of the cake mix. Use all the fruit.

Add the water or milk to the remaining cake mix and stir in well. This will make it easier to spread the mixture over the fruit. 

Cover the fruit with this cake mixture. 

Place in the oven at 180 C and cook for 20-25 minutes.
