This recipe was one of my mother and is in her old recipe book. She called it Muesli Loaf and use toasted muesli. I rarely have muesli in the house so I use rolled oats, fruit and a range of other ingredients that I have on hand.
This can be made as a big loaf or as individual muffin size cakes or even small loaves. It is very tasty with your morning coffee and could be used as a breakfast replacement.
What you will need:
1 cup rolled oats
1 cup of fruit (I used mixed fruit, chopped apricots and apples, currants, raisins and frozen berries
1 cup of milk ( you can use any type of milk)
1/4 cup raw sugar and 1/4 cup honey
1 cup SR flour
A dash of vanilla
Method:
Soak the rolled oats, dried fruit and sugar in the milk for 1 hour.
Add the vanilla and SR flour and mix well.
Place mixture into a loaf tin or muffin tins etc.
Bake a full size loaf at 170 C for 40-50 minutes.
Bake smaller muffins or loaves at 180 C for 20-25 minutes.
